  • 900 ml (4 cups) low-sodium chicken broth
  • 120 ml (1/2 cup) whole milk or half-and-half
  • Zest and juice of 1 large lemon
  • 50 g (1/2 cup) grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp chili flakes (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

Pour in the chicken broth and bring to a gentle boil. Reduce heat to medium-low and simmer, stirring occasionally, for 8–10 minutes, until orzo is just tender and most of the liquid is absorbed.

Return cooked chicken to the skillet. Stir in spinach and cook until wilted, about 2 minutes.

Add lemon zest, lemon juice, milk, and Parmesan cheese. Stir well until creamy and heated through, about 2–3 minutes. Adjust seasoning with additional salt and pepper if needed.
